A blend of 65% Pinot Noir from Aÿ and Mareuil/Aÿ and 35% Chardonnay from Chouilly and Cuis. The vineyards are worked in part by plough and then the ground is covered with bark in order to stop erosion and prevent weeds from sprouting. Herbicides are avoided all costs. / SOILS Limestone / Grapes are slowly pressed, and the wine undergoes malolactic and ages in stainless steel tanks. Dosage 5 g/l. Reserve wines are not used to adjust the blend of the non vintage wines, therefore all are from a single vintage but not marked as such since they do not rest on lees for the three-year mandatory minimum period.
Stéphane Coquillette had an enviable introduction to the craft of Champagne—the family business. He worked at his late father Christian’s side at the family firm of St. Chamant, an important producer in the Grand Cru village of Chouilly, and his grandmother, Hélène, was the first grower to domaine-bottle there.
At just 25 in 1979, he struck out on his own, creating his own Champagne house in the same village. Over the years, he acquired 10 parcels totaling 16 acres, and he is a true grower: He buys neither fruit nor wine and farms all of his grapes organically. His style is a little fresher and leaner than the more traditional St. Chamant that his father made legendary.
The new release of Coquillette's NV Brut Premier Cru Carte d'Or is showing well, mingling notes of fresh peach and lemon oil with hints of verbena and toasted nuts. Medium to full-bodied, fleshy and elegantly textural, with an inviting core of fruit and racy acids, it concludes with a penetrating finish.
