Thibaud Boudignon Anjou Blanc is an organic, barrel-aged white wine made by Thibaud Boudignon with the Chenin Blanc variety in the AOC Anjou denomination, in Loire (France).
After working for Gevrey-Chambertin (Bordeaux) and Château Soucherie (Loire), Thibaud Boudignon began making his own wines in 2009, acquiring 3.8 ha in the Loire Valley. Over the years he has been expanding plots in Anjou and Savemmières and is currently one of the most interesting winegrowers in the area, using strict organic practices in the vineyard and immense skill in the winery.
Thibaud Boudignon Anjou Blanc comes from 35-year-old vines planted in deep soils of gray shale and volcanic rock. Convinced that grape quality is the most important factor, he uses 100% organic agriculture and no chemical products. Planting density is limited to 8,000 vines / ha. The harvest is carried out manually and the yields are much lower than what is required by the AOC.
In the winery, the Thibaud Boudignon Anjou Blanc grapes are selected and gently pressed. The must ferments in stainless steel tanks with native yeasts for 2 to 3 weeks and ages in 300-litre and 750-litre barrels for 15 to 18 months; 30% of which are new.
