Rully wine is produced in the communes of Rully and Chagny in the Côte Chalonnaise subregion of Burgundy. The Appellation d'origine contrôlée (AOC) Rully may be used for red and white wine with respectively Pinot noir and Chardonnay as the main grape variety. Around two-thirds of the production consists of white wine, and around one-third is red. There are 23 Premier Cru vineyards within Rully AOC, but no Grand Cru vineyards exist in this part of Burgundy. The AOC was created in 1939.
Cultivated organically, the Chardonnay grapes used for this cuvée enjoy an ideal location on a south-east-facing slope. To make it, the domain vinified and aged the wine in used oak casks and demi-muids for a year and a half. This cuvée is marked by subtly exotic notes and hints of its maturation (vanilla, gentle spices). Dense, ample, and unctuous, the palate is lifted by a nice minerality. We recommend waiting for at least five years before uncorking this cuvée in order to fully enjoy it. The richness of this wine will pair nicely with fleshy fish or scallops with beurre blanc.
