Christos Zafeirakis is the fifth generation of his family to make wine in Thessaly, on the slopes of Mt. Olympus. He earned his master's degree in oenology from Milan, then worked in Tuscany, Piedmont and Alto Adige before returning home to Tyrnavos where he grew his family estate to 8 hectares and started the first organic vineyards in the area. Zafeirakis’ obsession is first and foremost with his soils, which are domintated by clay. All vineyards are certified organic and throughout the year the vineyards are carefully and rigorously cultivated. In the cellar, all wines are fermented with native yeasts.
Zafeirakis' Assyrtiko is fermented and aged in stainless steel. It pours a bright yellow with faint green highlights. The wine has a beautiful nose of wildflowers and citrus zest kissed with a whisper of vanilla. The palate is medium-bodied and wonderfully textured with flavors of stone fruit and Meyer lemon curd. The Zafeirakis Assyrtiko finishes with crisp, refeshing acidity and a tinge of minerality. Enjoy with a Niçoise salad, fried anchovies or squid-ink pasta with a seafood medley.
